Satay Chicken Skewers


This recipe is pretty close to authentic Thai. The chicken is meant to be marinated overnight, however due to our busy lifestyles, I've made this a quick and easy recipe. It can be served as an entree or a main and is a winner with the kids. This serves 2 as a main with rice.

Ingredients:

  • 8 bamboo skewers
  • 8 strips of chicken tenderloins
  • 1/3 cup crunchy peanut butter
  • 125ml chicken stock
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • Steamed Jasmine rice for 2 people

Method:

  1. Soak the skewers in water for at least 30mins to prevent burning
  2. Marinate the chicken in soy sauce while the skewers are soaking
  3. Thread the chicken onto the skewers
  4. Spray a griddle pan with spray oil and cook the chicken for about 5mins each side on a medium to high heat
  5. While the chicken is cooking, in a small saucepan add the soy sauce, peanut butter, chicken stock, honey and lemon juice
  6. Whisk well and keep warm until chicken in cooked
  7. Serve the chicken skewers on a bed of steamed Jasmine rice and pour over the satay sauce.  D-E-L-icious  XD

    How might I be able to adjust the sauce though, I can't have soy, and am not that fond of peanut butter.

  2. Teriyaki is a mild, but tasty sauce if you just want to have marinated chicken sticks. So omit the peanut and soy sauce and use teriyaki and honey together. It won't be thick enough to use as a sauce to pour over the top, BUT it makes a great marinade to soak the chicken in before cooking.
